My mom makes this recipe every now and then, and I wanted to know how to make it too, because then I can make it even if my mom doesn’t have time.
(And I also thought it seemed like a fun recipe to make.)
It’s a little like a Dutch Baby, but it has apples and cinnamon sugar, and you bake it in a pie pan instead of in a skillet.
Like a Dutch Baby, this is best when it’s hot and fresh. We eat our pfannekuchen for breakfast or when we want to have breakfast for dinner (or lunch sometimes!)
This recipe has been on my mom’s blog for a few years, but we thought it might be nice to have it here too. My mom usually makes two or three pfannekuchen, but the ingredients we listed in this recipe just make one.
To make your pfannkuchen, turn the oven to 400° F. Then put two tablespoons of butter into a pie pan and place the pan in the oven.
The butter will melt while the oven heats.
While the butter is melting, peel and slice an apple. Set aside. In a small bowl, combine sugar and cinnamon and set that aside.
In another bowl, beat the eggs, milk, and salt together. Then whisk in the flour. The batter will be a little bit lumpy, but that’s ok.
We put our batter into a measuring cup to make it easier to pour and also so we’d put an even amount of batter into each pan (We were making two at at time.)
Take the hot pie pan out of the oven and sprinkle the sliced apples evenly over the melted butter. Then pour the batter over top of the apples.
Sprinkle the cinnamon sugar over the batter.
Put the pfannekuchen back into the oven (make sure you use a potholder because the pie pans are hot!) Bake for 18-20 minutes, or until puffed and brown.
Let the pfannekuchen cool for a few minutes before you eat them (The apples are especially hot!)
Apple Pfannekuchen
makes 1

2 tablespoons butter
2 eggs
3/8 cup (6 tablespoons) flour
1/4 teaspoon salt
3/8 cup (6 tablespoons) milk
1 medium apple, peeled and sliced
2 tablespoons sugar
1/4 teaspoon cinnamon
Place butter in a 9-inch pie plate, and place in oven. Heat oven to 400 F.
Beat eggs, flour, and salt together until smooth. Whisk in milk.
Combine 2 tablespoons sugar and 1/4 teaspoon cinnamon.
Remove pan from oven when butter is melted. Place apples in pan, sprinkle with cinnamon sugar mixture, and pour egg mixture over top (or you can do it in the opposite order, like we did!).
Bake for 18-20 minutes or until puffed and brown.
