(Email subscribers, apologies if you get this a second time. If you do, it’s just a migration glitch, and I promise you won’t keep getting Baking With Lisey posts twice!)

Around Thanksgiving, I wanted to make some cute turkey cupcakes, but we ran out of time. So my mom suggested that we make a cute Christmas something or other, and we found these Santa cupcakes.

They were easy to make (we made them with my sisters and cousin and they had fun too!), and I think they’re really cute!

We made the chocolate cupcakes that we almost always use for our cute cupcakes.

And we made buttercream frosting to go on top of the cupcakes.

In addition to the frosting, you’ll need white chocolate chips, mini chocolate chips, coconut flakes, red sugar, and red decorator balls.

Actually, if you want to do it the way we did, you’ll also need mini marshmallows.  The original recipe called for coconut flake beards, but my cousin doesn’t like coconut, and so we got the idea to use chopped mini marshmallows.

I think the marshmallows make a better beard. What do you think?

Here are the steps to follow.

1. Frost the top of the cupcake with white frosting.

2. Sprinkle red sugar crystals over the top third of the cupcake.

3. Place white chocolate chips along the lower edge of the red sugar, and place one more at the top.

4. Use two mini chocolate chips to make eyes and one red decorator ball for a nose.

5. Press coconut flakes or chopped mini marshmallows into the frosting on the lower half of the cupcake to make a beard.

I hope that you have fun making these.  Merry Christmas!
