On a hot day this summer, my mom suggested that we try making some chocolate covered frozen bananas. I was a little unsure about the idea at first, but after we made them, I decided they were good. Frozen bananas are a little bit like ice cream, after all.
My favorite part was dipping them in chocolate and watching the chocolate harden super fast.
To make these, first peel and slice your bananas.
Then place them on a greased baking tray and stick a toothpick into the center of each slice. We decided to put peanut butter in between two bananas slices to see if that was good (and I thought it was!)
After the bananas are frozen, melt chocolate chips and coconut oil together. The coconut oil helps the chocolate to harden quickly.
Dip the frozen bananas into the chocolate and let the chocolate harden before you put the bananas onto a parchment-lined cookie sheet.
(Kristen’s note: The chocolate gets hard so quickly, the parchment-lined cookie sheet isn’t totally necessary.)
Store the chocolate covered bananas in the freezer.
Before you eat them, it’s a good idea to let them sit out of the freezer for a few minutes…otherwise, it’s like biting into a rock (especially if your freezer is set to a really low temperature like our chest freezer is.)
Chocolate Covered Banana Bites
Ripe bananas, sliced
1 cup chocolate chips
2 tablespoons coconut oil
peanut butter, optional
Slice bananas and place on greased cookie sheet (optionally, spread peanut butter between two banana slices). Stick a toothpick into the center of each slice. Freeze for several hours, or until frozen solid.
In a bowl, melt chocolate chips and coconut oil. Dip the bananas into the chocolate, letting the chocolate harden before placing onto a parchment-lined cookie sheet.
Store bananas into the freezer, and let them thaw for a few minutes before eating.
